A couple weeks ago I published a cauliflower bread recipe for all of you low-carbers out there. It was a way to try and introduce another texture into our diet, without adding carbohydrates. Shannon has really been really watching what she eats, and of course that means that for the most part, the boys and I have been as well. She has been really good about not cheating. The boys and I…well, not so much.
One of the things that have been stricken from our list of menu ideas is Pizza. The boys love it, I could probably eat it every day, and it’s full of carbs. The only time we get to enjoy it is if Shannon is gone for dinner, or if I can talk her into joining us. When she does eat pizza with us she’ll eat just the toppings, and that’s really not fair. That means we usually pass on the pizza goodness until she’s away. (This weekend she’s doing a Girl’s Night Out with the Moms of the Vegas Dads Group, so you know what we’re having…and what we’re NOT having!…lol).
When I made the Cauliflower bread I got thinking about the other uses, and one of the light bulbs that went off in my mind shouted PIZZA! The other day I decided to make a cauliflower bread pizza that even my wife could enjoy. I used the same recipe I used for the bread but changed the spices, this time adding 1/2 teaspoon of Italian seasoning, 1 tablespoon of dried parsley and about 1 teaspoon of dried garlic granules.
As you can see below, It was a success!
